A delicious slice of an Italian, special crostata, is what it takes to delight you in a sunny, spring afternoon!
You don’t have an Italian aunt that prepares you a homemade crostata? No problem guys, ours, zia Grazia can be your teacher today, and share with you her secrets for this simple but tasty Italian tart!
What you need for your perfect crostata:
250 grams (2 cups) flour;
100 grams (1/2 cup) sugar;
2 grams (1/2 teaspoon) baking powder;
125 grams (1/2 cup) butter softened;
2 cups (650 grams) the best quality jam of your choice for the topping (homemade is always the best);
One pinch of salt.
Mix together flour, sugar, baking powder, create a well in the middle, add eggs and softened butter cut into pieces and the pinch of salt. Mix together and work to form a soft dough.
At this point you can choose: if you have time you can wrap the dough in plastic and refrigerate for 30 minutes, then remove from fridge and knead the dough a couple of times to soften it up again on a lightly floured surface; otherwise you can transfer it directly to an ungreased pie plate and trim of any extra dough. Fill the pastry shell with the jam, then with the extra dough make strips and lay them over the jam in a cross-hatch pattern or you can create letters to form a name, like our aunt did for us Les Food Amants. Just have fun! Save some of the dough to add a ring around the border to create a rim, pinch it with the back of a fork.
Bake in pre-heated oven at 350F (180°C) for 30 minutes, until it begins to brown.
Aaaand…your crostata is finally made! Enjoy it in the afternoon with coffee, tea, cappuccino, or in the morning for an Italian breakfast!
