Comfort food of Tuscany: Ficattole

Featuring Mama cravings: Laura’s baby bump

Daniel isn’t born already, but he has Tuscan blood in his veins…So, let’s say his mum Laura heard about a festival nearby.. A special, country festival dedicated to a delicious food: ficattole. Daniel begins to send “special messages” through his baby bump and make the craving start. Future mum Laura needs now to be taken to the festival..and we did! It was so good but, wait a minute…festival ends tomorrow!! What if the craving doesn’t stop? Laura needs to learn how to cook these specialities …quick!

First of all, what are ficattole? They’re fried bread  dough served warm as appetizer alone or with cold cuts like ham, salami or stracchino (soft  cheese). They can also be called coccoli, with a slightly puffy form.

This  recipe, although heavenly, is easy and requires only a minimum of patience. That you have…right? 😉

Let’s go and try!

What you need:

250 gr white flour (2 cups)

17 gr yeast,(2 tbsp)

250-300 ml water,(1 cup)

Salt,

1 tablespoon of Extra virgin olive oil  (for a more tasty and authentic result, add the same tablespoon of lard)

Peanuts oil for fry.

Melt the yeast with a glass of warm water, add it to the flour already mixed with one pinch of salt and mix it. Add one tablespoon of extra virgin olive oil (or lard) and  more water , if necessary.  Knead for some minutes to have a soft but not sticky dough.  Make a ball, put in a floured  bowl and cover until has doubled its volume.

Now you can roll it and cut into stripes or make small balls rolling the dough. Whatever shape you prefer, fry them in peanuts oil, then add salt and serve hot!

    I am not a baker but maybe I could give it a try 🙂
    Best wishes to Laura and her little sweetheart, Daniel. I know the excitement of expecting a new baby. I have a son who is 22 and a daughter who is 10. This is a very beautiful time in a mother and father’s life.

    All of the food here ALWAYS looks so delicious 🌷.
